Did you know that I’m a vegetarian? I don’t talk about it a lot, but it’s true! My husband and I have both been vegetarians for over two years now. It wasn’t a big adjustment for us (we didn’t have enough money to buy meat very often anyway), but sometimes we have to get creative with lunch. The thing with a lot of vegetarian meals, you’ll find, is that they often take a lot of time to prepare and include a lot of ingredients you’ve never heard of (or maybe I’m just not cultured enough). This can be great to experiment with a big meal for dinner, but when it comes to breakfast and lunch, in my house, we are all about quick! Who has time to make a four-course breakfast or lunch (especially during the school year)? That’s why I love Quaker products like Quaker Instant Oatmeal, Life Cereal, and Quaker Chewy Bars!
